If you guys watch the tv series 'How I Met Your Mother', you will know Barney Stinson. He has this line 'Challenge Accepted!'. In my case, I do accept the challenge on serving us both good meals daily throughout our vegan period.
It was not much of a challenge to cook instead to prepare. However, the preparation of vegetarian meals had change me! For example, I now start reading the labels on sauce bottle. Obviously for this period of time, my favorite thai fish sauce is out of the cooking equation. For me, the real challenge to prepare vegetarian meal is the fact of ensuring the meal doesn't taste bland or another boring vegetables meal.
Tonight, I prepare dry wonton mee! I prefer dry version rather than the soupy one! This is not as traditional dry wonton mee in Malaysia where it has green chillies pickles and deep fried wonton that add 'omph' to the flavor. On top, broccoli is not a common vegetables that accompany this dish, more like green vegetables such as choy sum.
This is a perfect breakfast or supper as it is a light meals and easy to prepare.

Ingredients for 2 piles of spinach wonton noodles (most time wonton noodles are made from egg);
Steam broccoli:
1 table spoons sugar
500 ml water
1 cup of broccoli
3 table spoons melted butter
1) Boiled water and add sugar.
2) Steam broccoli on steaming basket for 3 to 5 minutes.
3) Season with melted butter.
Sauteed mushrooms with garlic;
Wonton Noodles Sauces (Mix all):
2 table spoons sesame oil
2 table spoons mushroom oyster sauce
2 table spoons light soy sauce
1 tea spoon of sugar
1 tea spoon white pepper
Assemble:
1) Boil ready made wontons noodles and add on with mix sauce.
2) Topped wonton noodles with steam broccoli and sauteed mushrooms.
3) Add gochujang sauce or any other spicy sauce that you prefer such as sambal.
Enjoy this easy to make dish.
