Simply Bruschetta

It is time for our (my partner and I) vegetarian diet to take place! It was never an easy thing to do as we are natural carnivore due to our love on red meat! Not to mention, I love them so much to the point of a must eat food almost daily! However, we have decided to venture into herbivorous lifestyle for the next 40days! Why 40days? Don't bother asking me! 

So, we started yesterday by eating outside! We ordered fried 'keuy toew' and somehow one piece of cockle were inside there! Oh damn, we decided that we should just stick to home cook meal for the next 40days! More like an excuse for me to force him eat my cook! Ok, that sounds a little evil! We bought load of fresh vegetables for our vegan diet since we are not a fan of wheat meat (seitan)!

This simple Italian dish is perfect in the morning as you can prepare everything within 10 minutes! I love this as it is a self customize recipe at any time! For me, the basic for bruschetta is baguette rubbed with olive oil and toast them! Top with whatever you want! This can varies from simple garlic rub, goat cheese, cream cheese, basil, tomato,mushrooms, etc. 

Ingredients for 4 slices of baguette (french loaf): 

Olive oil as needed
8 table spoons of grated cheese
5 baby tomatoes
Black vinegar (I love Monte Verde)
"Simply Bruschetta in container to work"
1) Cut french loaf diagonally about 1/2 inch thick and rub olive oil on both surface.
2) Top 2 table spoons grated cheese on each.
3) Oven: Grill on the top rack until cheese melted. 
4) Slice baby tomatoes and mix with 1 table spoon of black vinegar
5) Top tomatoes on the toasted slices of french loaf.

Enjoy this simple dish! I love baby tomatoes this way!
